
Yield: two regular 9" pies or one deep dish pie.
2 eggs, slightly beaten
1 16 oz can solid pack pumpkin
3/4 cup granulated sugar
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 102 oz can evaporated milk
1 unbaked deep dish pie shell
Place a cookie sheet on bottom rack of oven and preheat to 375 degrees.
Combine all ingredients in the order given. Pour into prepared pie shell. Place pie on rack above cookie sheet and bake for 70 minutes or until a knife inserted into the center of the pie comes out clean.
Cool to room temperature. Keep refrigerated.
