French Coconut Pie

This recipe yields TWO pies

5 eggs
1 stick butter or margarine
3/4 cup buttermilk
2 cups granulated sugar
1 can coconut
1/2 teaspoon vanilla
1/2 teaspoon coconut extract
2 unbaked 9" pie shells

Mix all ingredients in mixer and divide equally between the two pies. Place on a cookie sheet and bake at 350 degrees for about 35 minutes or until top is brown and knife inserted in middle comes out clean.

Cool to room temperature. Keep refrigerated.
